Ele tamb\u00e9m sabia o que estava dispon\u00edvel em sua pr\u00f3pria cozinha, em um resort sofisticado na Pen\u00ednsula de Nicoya, na Costa Rica. Havia um abismo entre os dois. Barcos de pesca transportavam regularmente vermelhos cioba e dourados para grandes exportadores, for\u00e7ando os chefs locais que quisessem mais variedade a importarem peixes.<\/p>\n<p>&#8220;Muito frustrante&#8221;, disse Geneau, que se estabeleceu na Costa Rica depois de ter come\u00e7ado sua carreira em Vancouver. &#8220;Justamente porque eu ia pescar, eu sabia quais peixes estavam dispon\u00edveis e os pescadores n\u00e3o haviam pescado. Eles n\u00e3o ligavam. E se pescassem algum diferente \u2013 pampo, por exemplo, cara, o pampo \u00e9 o peixe mais suculento e saboroso de todos \u2013 eles jogavam fora.
